What's your favorite cornbread recipe?

two boxes Jiffy or Bob's Red Mill, one cup cottage cheese, four eggs, 1 cup no salt added sweet corn, 1 cup shredded Mexican cheese blend, 1/3 cup melted butter & one tsp bacon grease. 350F for about 35-40 minutes.

I was raised in the south. My mom would use white cornmeal, eggs, milk... Think it's the recipe on the bag actually. Pour some oil in an iron skillet. Put pan in oven and heat. Then pour mixture in pan and bake. It makes the best corn bread ever.

Pioneer Woman's skillet cornbread. I replace half the shortening with butter and add a 1/4 cup of sugar. So amazing!!!

Not a recipe but the trader joes mix is the best!!! Anyone have a recipe that mirrors it?
