I have a friend that does this. HANDS DOWN the best cornbread on the planet. |
| two boxes Jiffy or Bob's Red Mill, one cup cottage cheese, four eggs, 1 cup no salt added sweet corn, 1 cup shredded Mexican cheese blend, 1/3 cup melted butter & one tsp bacon grease. 350F for about 35-40 minutes. |

| I was raised in the south. My mom would use white cornmeal, eggs, milk... Think it's the recipe on the bag actually. Pour some oil in an iron skillet. Put pan in oven and heat. Then pour mixture in pan and bake. It makes the best corn bread ever. |
