Cut 40 dried apricots in half (length-wise -- basically create two open faces). Soak for 30 minutes in a 1/2 cup of orange juice stirring occasionally. Toast some chopped pistachios. Remove the apricots from the oj and pat dry. Top each apricot with a little bit of goat cheese and top the goat cheese with 1 or 2 pieces of roasted pistachio and 1 or 2 pieces that aren't roasted (though, I have used all pre-roasted ones in a pinch). I get compliments and recipe requests every time I serve it.

My friend roasts green chiles (Anaheims or sweet Italian peppers if she can find those) and then chops them with a little olive oil and garlic powder. She slices baguettes into rounds then and lightly toasts them then tops with some if the roasted peppers and Monterrey jack cheese. Calls them Josephines. So yummy!
