If you want to keep it lighter I would serve rice (I prefer rosemary or jasmine rice). If you're looking for something a bit heavier petite roasted potatoes are always good.

No one said quinoa? That's what I would do. Either prepared plain, or with some sautéed chopped onion, garlic, carrot, etc to make a pilaf. Easy and nutritious.

Couscous with diced tomatoes, feta, scallions. Add small-diced cucumbers if you're feeling up to it. Salt and pepper, lemony vinaigrette with a bit of oregano or basil in it. So easy, can sit around for a while, goes great with salmon.

Cous cous is so quick. Add feta, balsamic dressing (I like Annie's), cucumbers and peppadew peppers!
