Start with something he knows and likes to eat. Whats his favorite resturant and/or dish?

I am a good cook and do most of our cooking, my wife is not good at all but what I have learned, is to eat what she makes. You can push him to do better, there are some super easy things and not clear why anyone would be boiling meat which makes me think you are exaggerating in your complaint, but you should also just eat what you get and be thankful.
