If I had to drink a milk substitute, Rice milk and soy would both land dead last on my list. I'd at least switch to Coconut milk. No I do not think this is healthy if these are your primary meals. I had a child extremely ill, so ill that homeschool was the only option, requiring 24hr care. I cooked in bulk and made freezer meals. It was critical that I took care of myself and even more critical that my child get nutrient dense foods when he would actually be well enough to eat. We really also got into green smoothies. If your child is sick and if they can eat, then what they do eat is so important. It is also important that the caregiver keep themselves healthy, because passing on illness can be deadly.
