Everyone loves osso buco believe it or not. Toddlers and kids too.
It's really easy, you just have to find good veal that's not too expensive. Flour salt + pepper + brown veal shanks (1 pp), add chopped onions and chicken broth to cover. Simmer 15 min. add carrots + celery, simmer 30 minutes. Add mushrooms, simmer 15 more or until done. Serve over noodles or with polenta. |

This is op, here is my meatball recipie from tonight
3 lbs ground beef In a mixing bowl I put 3 eggs, 1/2 cup parm cheese, palm full of salt, palm full of pepper, 2 cubes of the frozen garlic you get at trader Joe's, 1 cube if the frozen basil (same brand as garlic) 1/2 cup milk, 1 cup of plain bread crumbs * I almost never have bread crumbs on hand, I have used crushed Cheerios, rice checks or Rice Krispies and it turns out the same as bread crumbs lol I mix everything but the beef in a bowl, then add the beef and mix well with my hands. Then I roll into balls and just drop into simmering sauce, I don't bother baking or frying before Tonight this is how I made sauce Sautéed in bottom of large pan in olive oil I package sliced mushrooms 3 mixed color bell peppers 1/3 package baby carrots 1 onion cut up 2 garlic cubes 2 basil cubes After about 10 min I added 2 large cans of tomato sauce 2 large cans of whole tomatoes in sauce Ground pepper, I only add salt at the end if it needs I blended it with a stick blender in the pan Simmered for 20 min while I made the meatballs and then simmered with meatballs for another 20 min It sounds complicated I guess written out but the whole thing from start to finish only takes an hour, I freeze the leftover sauce once the meatballs are gone and use it for pasta or lasagna |

I'm not meatball mom, but I do make meatballs frequently and my family loves them. I have a generic recipe that can be customized in a number of ways.
Start with a slice of white sandwich bread. Tear off the crust, put it in a large bowl, cover with 2-3 Tbl milk and mash with a fork. Let it sit for a minute or two until the milk is absorbed. Add an egg, beat lightly with a fork. Add seasonings: salt and pepper, or Italian herbs, or Penzey's Bavarian seasoning (my fav), or something spicy, or whatever else I can find in the cupboard. Add 1 lb ground meat - beef, lamb, turkey, pork, or any combination thereof. Mix until combined. To cook, any of these methods: - drop by spoonfuls into a tomato/marinara sauce, simmer until cooked through - brown in a skillet, reduce heat to med/low, cover and cook until done - brown in a bit of olive oil in a skillet. Remove, add some flour to the oil to make a roux, add water or broth, stir to make a gravy. Return the meatballs to the pan and simmer in the gravy until cooked through - roast on a baking sheet I use the same basic recipe to make meatloaf (add some ketchup), or "skillet meatloaves" by forming them into small individual rectangles and cooking in a skillet. |

OP again, calzones are super fast and easy
1 bag if trader Joe's pizza dough, leave on counter for 20 min or so Chopped meatballs or any other leftovers A little pizza sauce or marinara sauce Mozzarella cheese Ricotta or cottage cheese I toss the dough just like I was making a pizza, out on a flat cookie sheet that has been sprinkled with flour. Put sauce on the middle of one one half, add meatballs and cheese. Fold dough over the filling and pinch all sides closed. Put on pre heated pizza stone cook at 425 for 20 minutes |

homemade pizza. we make a huge one and divide it up into toppings for each person. served with a big salad.
bbq chicken, mashed potatoes, roasted veggies or a big green salad with marinated peppers and artichokes and avocado and hearts of palm, buttery garlic bread veggie burgers with lots of toppings and fries/sweet potato fries. usually served with carrots celery and peppers and a dip for "salad." seasoned black beans, cilantro lime rice, lettuce, tomato, cheese, olives, fresh homemade salsa, homemade guac, sour cream, corn salad, tortillas and hard shells = DIY tacos or wraps or salad stirfry of broccoli, carrot, onions, eggplant, bell peppers and tofu with lots of basil and a sauce made from sesame oil, grated garlic and ginger, rice wine vinegar, soy sauce and brown sugar. i use sriracha. served with rice and a big bowl of fresh pineapple. these are all pretty easy. if we're home by 6 we can do them on a weeknight. |

| Hmmm. My DH loves stew beef and gravy and ribeyes on the grill with baked potatoes. My stepson loves my spaghetti and chicken fettuccine Alfredo. I like my homemade minestrone soup, chickpea curry with basmati rice, or the skillet gnocchi recipe from Eating Well. |

This is a hit, provides the right sweetness for the rice and chicken to appeal to the whole family. We all eat it. It's a good 1 hour preparation with browning the chicken in a Dutch oven but... yum! I usually serve with steamed broccoli.
