Went last summer for our anniversary and loved staying in the 6th. It was my fifth trip, and my favorite neighborhood for proximity to sites, walkability, and easy food options close by (I previously stayed in the 5th and 7th, and have good friends who stayed in the 4th - all are good choices). Try Hotel Le Clement in the 6th. Charming and not too pricey. Think carefully about staying in Montmarte, as it is not very convenient to many of the major sites. It's nice to have your hotel in proximity so you're spending less time getting around, can pop back to the hotel mid-day. It's also nice to stay in a neighborhood that has a lot of great evening dining options. I don't know so much about the surrounding neighborhood up there, but I'm a seasoned city dweller and parts felt a bit sketchy to me. Even barring that, I'd be less jazzed about staying there than other neighborhoods due to the more remote location compared to where you'll be spending the bulk of your time.

For one week, you could do all the classic sites. I love Orangerie, Rodin, Louvre, Orsay, Cluny (unicorn tapestry is back) museums. Notre Dame with a climb to the top, and St. Chapelle for the stunning stained glass windows. Montmarte, Sacre Coeur with a climb to the top. Of course the Eiffel Tower, day and night are both special. A side trip to Versailles is easy and worthwhile. There was a fantastic Marc Chagall exhibit at the Luxembourg - very worth going if it's still open. The Pompidou, Picasso museum, Pere la Chase cemetery, catacombs…so many options to choose from!

You could also try a cooking class, wine tour, etc. David Leibovitz has a fantastic book Sweet Life in Paris, and a website, that link to other resources.

No matter what you do, you'll be in Paris and it will be wonderful.

Seriously OP, cancel the apartment in Montmartre. It's considered the seediest and dangerous area in Paris. It's not romantic at all.

Have a picnic with wine at sunset Eiffel Tower (go early, lots of people do this)
Make a lock for the bridge
If you are religious ask for a sacrament at Notre Dame
Get fondue near Notre Dame

Paris pefect has lovely apartments. Even if you do not rent from them their web site has some good information.
