Aging parents-do they loose their ability to empathize? Nastier to the kids they see the most?

This. She's probably better able to hold it together for people she doesn't see as much as you.

I was a teenager at the time, but I remember the same happened with my grandmother. She was a sweet mild-mannered person till probably her late 80s, when she developed Alzheimer's. After that, she definitely lost her filter and would make blunt, if not rude, comments to others and I think she was rather hard on my aunt, who was the one child still living near her and who had to bear the heaviest burden in taking care of her. It's sad but seems to be just a fact of life. Sounds like you are handling it as best one can.
