Kale chips. Even my kids love them. We only put olive oil and salt. I put parmesan cheese on it the first time I made it but they prefer it plain.

| Yes. How big or small is up to you. But you don't want tennis-ball-sized funny-shaped chips. |

| Np...I went to the store today in search of kale. Apparently everyone else did too. I had to literal scrape the bottom of the barrel, but I bought what I could find and made the kale chips. They were great! Even dh liked them, and he runs from anything green. The next time I make them, I will go easier on the salt. I think I overcompensated, but for my first time, I am happy with the results. Btw, do you know how long kale chips last? I would like to make a huge batch and eat when I have a snack attack. |

You can try, but they won't last. They keep only until someone eats them, which in our house tends to be less than 24 hours. (Sometimes, less than 1 hour.)
We keep them at room temperature in a sealed plastic container. They'll last a day or two; never tried longer than that. |

Someone posted this recipe recently and I tried it last night. It was sooooo good. I brought leftovers with grilled salmon for lunch and my husband took leftovers with steak for his lunch

It mixes well with anything so I often add it to soups and sauce.
I was planning on trying a kale soup recipe yesterday, but alas the sweet potatoes went too long on the counter. Darn it! The recipe sounds good - its just onion, garlic, chicken broth, kale, chorizo, and sweet potato. |
