I bought kale. Now what?

Kale chips. Even my kids love them. We only put olive oil and salt. I put parmesan cheese on it the first time I made it but they prefer it plain.

Yes. How big or small is up to you. But you don't want tennis-ball-sized funny-shaped chips.

And for either kind, you need to get rid of the center stems.

BTW, 3 yos love to rip up kale. They can also toss it with oil with their hands, as long as you control the amount of oil.

Op here. Made kale chips to go with red pepper tomato soup for lunch. It was great! Thank you, kale aficionados. Next time I will bring the 3yo in on the fun.

Np...I went to the store today in search of kale. Apparently everyone else did too. I had to literal scrape the bottom of the barrel, but I bought what I could find and made the kale chips. They were great! Even dh liked them, and he runs from anything green. The next time I make them, I will go easier on the salt. I think I overcompensated, but for my first time, I am happy with the results. Btw, do you know how long kale chips last? I would like to make a huge batch and eat when I have a snack attack.

You can try, but they won't last. They keep only until someone eats them, which in our house tends to be less than 24 hours. (Sometimes, less than 1 hour.)

We keep them at room temperature in a sealed plastic container. They'll last a day or two; never tried longer than that.

Someone posted this recipe recently and I tried it last night. It was sooooo good. I brought leftovers with grilled salmon for lunch and my husband took leftovers with steak for his lunch

Tips/Tweaks:
- I omitted the radishes, goat cheese and pecans because I didn’t have them in the house
- I added sliced almonds instead of pecans
- I forgot the salt and pepper in the dressing but it was still pretty tasty
- Do sprinkle the kale with salt and squish the pieces together really well to get rid of the bitterness, it should become dark and fragrant per the author (and it did)

It mixes well with anything so I often add it to soups and sauce.

I was planning on trying a kale soup recipe yesterday, but alas the sweet potatoes went too long on the counter. Darn it! The recipe sounds good - its just onion, garlic, chicken broth, kale, chorizo, and sweet potato.
