I'm going to hope simple ignorance is at work here, and explain to them that ham is unkosher no matter how its prepared, and even people who don't keep kosher will very likely not serve ham for a holiday meal.

You might want to go with making up some sort of deli platter. I don't know how close you are to one of the kosher markets but pick up some corned beef, pastrami, salami and let people make a sandwich to go with their latkes.

We always had a deli platter along with the latkes. They are the star of the show.

You could do chicken kabobs with hummus, pita etc.

It seems the every bar/bat Mitzvah, Seder, Wedding in my family revolves around two things. The first is Chinese Food. The 2nd is Salmon, stuffed, smoked, broiled, etc...

I second the deli platter. We do this every year and it is a hit!

We had that debate last night and decided to go with Red Snapper. Thanksgiving meal is the very next day, so too much meat otherwise.
You're also supposed to eat cheese in honor of Judith (don't ask me why).
