Kitchen Sink on Peninsula

Oops - forgot to write that since our countertop is made of wood, I have always been vigilant about wiping off water after using the sink. It's become a mindless habit.
You need to figure out a combination of sink and faucet where the water does not splash too much on the outside. I have a rather large and deep farmhouse sink, and a faucet that comes down pretty low into it (it has a retractable head). That way I minimize splashes.

This, agree. My parents house is the same... maybe 12-18" behind the sink where there are barstools. I like everything built in but my family is old school (doesn't use the dishwasher) so they have a damn dishdryer rack thing sitting on the end next to the sink which makes it look cluttered. Otherwise I think it is a nice layout- for 20 or so people even. You can hang out at the command center washing dishes and talking to everyone seated there and at the kitchen table and dining tables beyond and it looks toward the ocean view and the wildlife. Make sure the view is nice!
