Also, OP, you could do french toast with the egg substitute. if you don't have time in the morning, you could try an overnight french toast recipe and bake it while you get ready for work/school.

Breakfast tacos with mashed black beans, slice of crispy turkey bacon, cheese, and avocado.

-Nut butter & honey on toast is a standby around here.
-Greek yogurt (plain) with honey and granola.
-Yogurt based smoothies. Peanut butter & raspberries is a big hit. (The smoothie joint near us makes it and it is *good*.)
-Google for a high protein / high fiber muffin recipe.
-Anything you normally think of as lunch/dinner food. No reason you can't have leftover chicken with breakfast! Europeans commonly have sliced meats / cheese / tomatoes on toast for breakfast.

Grits with a puréed veggie mixed in. I make mine with cream for my skinny preschooler. Tasty!

Our five year old loves hot cereal. We usually use one one of the Bobs Red Mill. varieties. They have enough protein and fiber that they are quite filling. I add coconut oil and sweetener (fruit, honey, agave syrup,etc ) and its awesome.

Greek yogurt has a ton of protein. Add it to a smoothie if they won't eat yogurt as-is. Can kids have peanut butter or other nut butters? Mine can't due to allergies, but if yours can, this would be great on toast.

Chia is a seed from South America that expands in water, so if you drink a tablespoon or two, it will expand in your stomach so that you will feel full for a longer period of time. I tried it and it is pretty gross and the seeds were hard to swallow....also I didn't feel full. However there are a lot of health benefits.

My husband puts chia seeds in oatmeal (steel cut) every morning. He makes a big pot on Sunday evening and then eats it all week with chia, raisins, and chopped nuts. My 4 YO will eat a small serving of it. It is better, IMO, with some honey on it.

I'm sure you could find some recipes for fritters that use the egg substitute that you mentioned-- cheese and broccoli or other veggie combos. I love the PP's suggestion of breakfast tacos with beans and avocado, yum!

Tofu scramble with veggies--make a pot of it on the weekend and use it as a breakfast burrito filling throughout the week.

I sometimes make a parfait with vanilla yogurt, fresh fruit like berries and banana slices, and granola. I layer it and sometimes drizzle a tiny bit of honey in there. My kids love it.

I also make smoothies with yogurt, a banana, frozen berries and some ice in the blender.

Kippers (smoked herring) on toast or crackers.

My kids are 2 and 4 and they love it. Our favorite comes in a can at Trader Joes.

We also love whitefish salad, but I think its made with mayo and therefore egg.
