However there are a lot of health benefits.[/quote] My husband puts chia seeds in oatmeal (steel cut) every morning. He makes a big pot on Sunday evening and then eats it all week with chia, raisins, and chopped nuts. My 4 YO will eat a small serving of it. It is better, IMO, with some honey on it. ;-) I'm sure you could find some recipes for fritters that use the egg substitute that you mentioned-- cheese and broccoli or other veggie combos. I love the PP's suggestion of breakfast tacos with beans and avocado, yum![/quote]
