Need quick (and inexpensive) appetizer idea

I've also seen this with thyme, rosemary, fig jam and cream cheese. You can also use goat cheese, but the poster asked for inexpensive options.

Not the pp, but love this dish. Yes drain the beans. Olive oil based on texture desired. It should be like a hummus.

You can also do it with beans, steamed carrots and cumin/cayenne. However steaming carrots is not as quick.
You can also use fava beans or chickpeas.

I'm doing this this afternoon. I'm throwing in watermelon and fine-diced zucchini, since I have them and need to use them.

Garnish with some chopped fresh herbs or scallions on top.

OMG Martha, this is not quick!!!


Hey, I'm not the one who suggested gazpacho. I suggested cheese and crackers, or hit Trader Joe's. But the gazpacho does sound good, so I'm going to whip some up. It's chopping and blending--doesn't take that long. (Especially if you already have all the ingredients, plus a stick blender, aka boat motor.)
