Cut eggplant into 1/2" rounds (crosswise) or slabs (lengthwise).
Brush both sides with a marinade or glaze. Grill, and re-brush each side while grilling. Make enough to have leftovers. It's good in sandwiches during the week. |

I heard you can make fake pulled pork with breadfruit. Haven't tried it yet but I am planning to soon.
You can do baba ganoush, grilled pizza, corn on the con, grilled peaches over grilled fake pund cake. Grill red peppers and make romesco to serve with grilled zucchini and potato wedges. Cashew cream would be delicious on just about any plain veggie you grill. You can make vegan hot wings with seitan. Veganomicon has a chickpea cutlet recipe you could grill. Fajitas, tortillas, even arepas with beans. You have lots of options. |
