I make salad dressing with them. Blend with garlic and lemon juice and salt and pepper. It'll be the consistency of runny mayo. Delish with romaine lettuce and cherry tomatoes or use in place of mayo/mustard in a turkey sandwich.
Also just eating it out of the shell wih a spoon and a dash of salt is good.

I use them for breakfast and lunch wraps frequently.

Breakfast: Egg whites, salsa, TJ's Whole Wheat Wrap, Avocado

Lunch: Italian deli turkey from TJ's, salsa, avocado

Sometimes I will throw some spinach or other greens in too.

Avacado (halved and seed removed)
1 container vanilla yogurt
6 ice cubes
Milk
Honey

Blend! So creamy and tasty. And high in protein if you use Greek yogurt. DD loves this. It's almost like ice cream.

Forgot this classic! Scoop out a tiny bit of the avocado so you can use it as a "bowl" (but leave enough of the avocado so you can still eat it! Fill w/ cold baby shrimp mixed lightly with Russian dressing.

Put an avocado chunk/slice on black bean soup or gazpacho.
