This is a crazy week for us after being out of town until Sunday and not getting to the store, and some emergency home repairs...house is a mess and schedule is all off with meeting workmen etc.

Sunday night I made a simple stir fry from frozen veggies we had and I whipped up a quick sauce. Last night DH got take out from Whole Foods. Tonight will be veggie lasagna, with leftovers tomorrow.

Thursday night will be an arugula and quinoa salad (with grape tomatoes and feta). Friday will probably be salad again.

We don't do meatless Mondays. Protein, it's where it's at.

Anonymous wrote:Sunday - lasagna (made an extra pasta casserole with left over lasagna cheese & meat- froze it for future use)
Monday - crock pot chicken (whole) with red beans. I will make rice with rice cooker once I'm home.
Tuesday - Meat loaf (Pre-made on Sunday when I was making lasagna), peas, potatoes
Wednesday - left overs
Thursday - Reserved chicken breasts from Monday, using it to make quesadillas or chicken enchiladas.
Friday - Salad (sometimes with leftover meat, otherwise add tuna and/or beans).
Saturday - grilled pork chops, green beans or broccoli

We are scratching the meatloaf for tonight. It freezes well, so I will save it for a rainy day. Today is all about the grill!
