Locinato Kale works too!

This. 101 Cookbooks has excellent ideas for healthy veggies. And healthy everything else, for that matter. Yum.

Kale salad is fantastic.

Wash well, remove stems/spines, shred leaves with your hands. Add a bunch of olive oil and chopped garlic to the kale in a large bowl, massage oil/garlic VERY WELL into leaves with your hands. This softens and flavors the leaves without any cooking. Then let it sit for at least an hour for best results. You may want to add kosher salt (sometimes I do, sometimes I don't). We usually top with chopped walnuts or pecans and dried cranberries. Even my kids love it.

14:27 followup: if you're bothered by the smell of garlic on your hands afterward, squeeze lemon on to your hands. Cuts it quite nicely.

Better yet -- squeeze the lemon into your salad. Lemon juice with the olive oil and garlic juice makes an awesome kale salad dressing--especially if you emulsify it first (with a whisk, blender, or food processor). As PP said, pour it on, then massage well, then let sit for at least an hour. We top ours with toasted bread crumbs and parmesan shreds.

Try this chickpea, chard (or kale -- I've done it both ways), and Greek yogurt recipe from Yotam Ottolenghi. It's so delicious I'm totally obsessed with it!

Sauté it with some onions and garlic, and then simmer in coconut milk. Add chiles if you want it spicy.

If you want make a meal of it, sauté chard with garlic and red pepper. Separately fry an egg (or 2) on top of a piece of prosciutto with a little Parmesan at the end. The runny eggs on top of the sautéed chard makes a delicious sauce.
