Lemon juice with the olive oil and garlic juice makes an awesome kale salad dressing--especially if you emulsify it first (with a whisk, blender, or food processor). As PP said, pour it on, then massage well, then let sit for at least an hour. We top ours with toasted bread crumbs and parmesan shreds.
