Make ahead breakfast ideas that can be frozen for the kiddos.

I make a lot of healthy muffins and freeze them by the dozen. I have found some great recipes online that use vegetable/fruit purees and yogurt instead of lots of oils and sugar and I always use whole wheat flour. You can also add flaxseed, dried fruit, etc. to make them even healthier. I always freeze bananas that are going bad and just thaw them out when I make a batch. You can also freeze extra berries to have on hand or puree leftover vegetables and freeze them to pull out when you want to make a batch of muffins.

There are other recipes in her book that are really good for freezing (both muffins and other snacks/meals). I use this book a lot!

I make big batches of smoothies and freeze them in quart or gallon sized baggies. I usually fill the blender twice or even three times, which yields a lot of smoothies for the freezer stash, and I only have to clean the blender once.

Ingredients:

Bananas (buy in bulk at BJs, if they ripen before I can use them, I just peel and freeze)
Frozen blueberries, strawberries or tropical fruit mix (also from BJs)
Non-fat vanilla yogurt (big container)
Non-fat milk
Ground flax seed
Sometimes powdered milk for extra calcium/protein

The proportions are different each time -- depends on what fruit we have in the freezer at the time -- but they always taste great. Use more bananas to thicken the smoothie, use more milk to smooth it out. I think you could even add peanut butter, if your kids eat nuts.

IDK. Maybe not. I just burnt oatmeal on the stove today, so I can see the appeal of microwaving.

Baked oatmeal. Lots of recipes online. It turns out like a soft granola bar. You can add nuts and raisins or cranberries, etc. very healthy, then slice and wrap individual portions in Saran wrap. Set out how many you need the night before and they are ready to grab in the morning.

Thirty minutes, not three! And yes, it's because who has thirty minutes to stand over a stove and stir constantly to keep the bottom of the oatmeal from burning. I nuke my hardboiled eggs, too!

OP here. So far Ive done the breakfast burritos. My son ate one this morning and gave it a thumbs up! I sauteed some peppers (green, red, yellow), along with fresh garlic, spinach, and onion. I diced a potato really small and boiled it. When it was soft I added that to the saute mixture. Then I scrambled some eggs and nuked a veggie sausage. I put all that on a wrap and topped it with some cheddar cheese and a little salsa. This morning my son put it in the microwave for 2 minutes and it seemed to reheat just fine.

I used Harris Teeter brand flour tortilla wraps. It stayed together for the most part but the wrapping was a little sloppy. I might experiment with different brands of wraps.
