I would think you might ruin your blades in the FP if Idid the same stuff I did in the vitamix. I'm not sure the sorbet would work out too well. Also, you can go either a much smaller, or larger portion size in the vitamix vs. the FP. Not sure about your FP, but min has 2 speeds, my Vitamix has a full range of speeds.

I supposed if you had the patience to clean it and were willing to replace your blades and possibly replace the motor over time (really probably a long time) I would say go for it. I just do not consider my Cuisinart FP a heavy work horse like my Vitamix. I would say it is the difference between a 4 cylindar car and a Chevy v8. Sure, both can get you around, but one hauls a lot more than the other. I'm a heavy vitamix user, so a FP would be crushed in just a matter of time and I'd spend all day cleaning the machine.
