You know what's sad? I didn't need to google or even get out of the chair to know that Carrageenan is used in ice cream.

Kombu is an algae.

It's a sad reflection on you that you do not realize that seaweed extract (carageenan) is healthy, entirely plant based, and from the sea. It has been used for hundreds of years. Not only that it is the vegan alternative to gelatin. And a few hundred years ago it was used as a natural home remedy.

It's even worse that algae, which is the basis of most of the planet's food chain, is considered by you to be "processed".

OP here. Just wanted to say thank you to everyone who responded.
My kid was doing his homework and couldn't find anything in the kitchen, and when you look up the ingredients directly, most of the top links show you where to procure the ingredients as opposed to listing brands that contain them.

Definitely. You need to enter the terms and then some additional key words (food, ingredient), etc. and keep trying until you come across what you need. If you enter "Carrageenan" in Google, the first hit is a Wikapedia article that gives lots of hints about where you could research further. It mentions, for instance, that it's a replacement for gelatin. So you could then search for "carrageenan" and "pudding" and there's one food there.

Actually, before you even continue on to additional search terms, the very first page of results if you enter "carrageenan" shows a few brands and foods (like Eden, references to soymilk, etc.)

Not the smug PP but it's easy.

Bring milk to a boil. (I do this in the microwave. ) Let the milk sit out until it cools to 110F. Add a little old yogurt - 1/4 tsp - 1 tsp. put the container in the microwave or the oven and wrap it in some towels. In the morning you will have yogurt. It's not that hard and nothing to brag about.
