You may want to do more research on this. Are there medical services available in Colorado? Do they have potable water? What happens if there's civil unrest of the kind we're seeing in so many other far-flung places around the globe.

Whatever you decide, you'll want to check the State Department's website, but I personally would not risk it.

I think a lot of the PPs gave you suggestions of things to do - only you can decide if your kids would think it was fun.
