One of my favorite recipes ever; I have been known to eat it for dinner. If you are pressed for time you can use frozen green beans and frozen kale but it is much better with fresh:

| My husband makes a fantastic, easy and delicious linguini dish with kale. Basically you cook the pasta and have your washed/ cut kale in the pasta bowl. Put the freshly cooked, warm pasta over the kale, toss with a little olive oil and then shave fresh parmesean cheese over it. Toss. Delicious and so yummy...we sometimes add pine nuts to the mix. |
| i go asian with my kale. give it a quick braise in some chicken stock (not too long, you do not want it to be soggy) and then i toss with sesame oil, and chopped onions and bell peppers (also helps it to look pretty and colorful). if i am having company over and spinkle sesame seeds on it to make it look fancy. |
| Fried cale is fantastic. Similar to kale chips. Let olive oil get a bubbly hot and put pieces of kale in the pan. Fry it up; drain on paper towels. Makes chips. |

(1) Bake with grated parmesan cheese. I prefer this when the kale becomes bright green, not too crispy.
(2) Traditional southern style greens. I'll use collards, mustard greens, or kale. My favorite recipe uses onion, garlic, a little red wine vinegar, and bacon. |
I find that collards and kale can be used almost interchangeably. We do something similar but cook the kale in olive oil and garlic, and also brown some walnuts or pecans to add into the mix. Lightly cook the nuts dry (no oil) in an iron skillet, shaking gently while they cook, and remove from heat when they're fragrant and chop if you like. Add to pasta mix. Kale salad: wash kale, pull leaves away from stalks, mix leaves in a bowl with 1 or 2 TBSP olive oil, work it in to the leaves with your fingers. Add a clove or two of chopped raw garlic and some salt (preferably kosher). Let it sit and marinate for a while. YUMMY. Add cranberries and toasted nuts for even more flavor. So easy, so tasty and healthy. Kale chips: our kids love these. You can find lots of recipes for these online, but basically you just bake and salt. They're addictive. |

Alls you need to do is tear it into pieces, spray it with pam, sprinkle it with some kosher salt and put it in the oven for ~ 20 minutes.

Wouldn't a sprinkle of olive oil be a lot healthier? I love your idea, but Pam makes me a little squeamish . . . |
| I made the garlicy kale and pasta recipe in this months real simple and it was delish. Saute onions and garlic in olive oil add kale, salt and pepper. (I also used a dash of tabasco) add halved grape tomatoes toss with angel hair- great |
