Question for those who make fried rice at home

I use fresh cooked rice if I don’t have over night rice, water:rice = 0.8: 1

Just saying that the grains don't separate or brown right if OP is looking to make great fried rice. It's too sticky.

This is OP, I only use cold leftover rice--it's the only reason I'm making fried rice, to be honest,

So many variations on here. I will try a few of them. Thanks!

Maybe, but it could be like Eel sauce that is sauce meant for Eel, or duck sauce. My oyster sauce says Vegetarian on it (Wegman's brand) so I know it's got no fish.

Usually it does have oysters. I've missed it since my family went vegetarian. But thanks for this tip I'll look for Wegmans brand next time I'm there

I don’t make it with a sauce, but I add sesame oil, soy sauce, chili garlic paste and sriracha when I’m cooking it. And salt and black pepper. I make mine with a bunch of eggs, some stir fried broccoli and frozen mixed vegetables. I add in chopped scallions when it’s almost done cooking. I always use leftover rice too. My family loves my fried rice.

As long as it's not toasted. Careful..low smoking point so for most cooks a finshing touch.

I also don’t use a sauce.

Oil, break in 2 or 3 eggs, throw in cold rice, carrots and peas. Sprinkle in fish sauce or soy sauce if I want it darker colored. A few drops of Sesame oil and scallions on top.

Chinese sausage if I’m doing non-vegetarian.

I get rave reviews every time.

i make with butter and soy sauce. add some polar hoisin on top. it's really good!
