Especially for children! Low carb has its place if you’re trying to treat a disease like T2 diabetes or obesity. But it’s not the right choice for healthy children. |

3 cups oats 2tsp baking powder 1/2 tsp salt 1/2 c brown sugar or maple syrup 1 cup milk or alternative 3 eggs 1/3 cup coconut oil or your choice Mix all together and bake at 375 for about 30 min. I have different pyrex that I use for these and I switch them up. Check it at 20-/25 m just in case. I change it up and make a different one each week. This week I’m making it with chocolate chips and a mashed banana. |

I made baked oatmeal but most of it got eaten by the kids. Budget Bytes banana baked oatmeal. Has eggs in the recipe.
Also made naan. 4 for with tonight’s curry and freezing 4 for future use. Also made a double batch of enchilada sauce. Half for enchiladas tomorrow and half for freezer. |

Because you think it’s unsafe? It’s only dangerous if left out, not refrigerated. And that’s a thing for rice because in some places leaving rice sitting in a rice cooker for hours or days is relatively common. If you don’t do this, but get your leftover rice in the fridge as you would anything else that’s moist and cooked, the leftovers are fine. |

| If I make a slaw-ish salad, I find I can eat it for a few days for lunches as it doesn’t wilt like a lettuce-ish salad will (like romaine or spinach or Bibb). Kale salads also work for the same reason. |

Heavy on my meal prep rotation right now with 2 teen athletes. We eat a lot of grab and go.
Kodiak mix choc chip muffins or banana bread 2 lbs of chicken in the instant pot with salsa, shredded- for quesadillas or with microwave rice Pizza muffins- 1 lb of dough split into 12 equal pieces. Put in muffin tin with cheese, sauce, toppings Quiche or sheet pan eggs, heated up with English muffins and fruit Pesto tortellini or ziti with red sauce for easy reheat We eat real meals too that include vegetables. But for quick meals we always have a lot to grab on hand. |
