How about around Ithaca, NY? It's near Cayuga Lake, Watkins Glen isn't too far and there are a lot of beautiful waterfalls and hikes next to Ithaca- Taughannock Falls is amazing. Also, Ithaca surely won't break the bank.

We've been to Ithaca and it's great for a few days. I'm sure there are som nice Air BnBs and maybe a resort, but we stayed at a Hampton Inn Ithaca.

I'd do the delaware beaches (Rehoboth or Lewes) They are set up for big groups and there are always lots of things for kids to do. Fall at the beach is my favorite, but I probably wouldn't go after beginning of November.
