I would stop and get a quick dinner when you make a bathroom and gas stop. Or I would have a cooler packed with sandwiches or bowls. But I would absolutely not want to make dinner when I arrived anywhere after 9pm. I wouldn’t want to deal with it and I wouldn’t want to eat that late.
Do you have kids? There are plenty of things you can pack that aren’t too unhealthy. Given your travel schedule I think you need to give yourself some slack on the travel day. |

I didn't make that suggestion, but if you bring an instant pot down with you, that is one of the easiest dinners to make. You basically dump everything in (including the pasta, sauce, and enough veggie broth to cook the pasta) turn the pot on and set it for around 5 min. Once it's done, release the pressure and you're ready to eat. |

| Pack some bagged salad mix, some deli meat and/or grilled chicken, a selection of cheeses, crackers, and rolls. You can decide how to eat it when you get there (heavy on salad if feeling healthy, heavy on the meats and cheeses if feeling super hungry). |
