I recently grilled skewers with swordfish and fresh pineapple and served with an Indian spiced couscous. It was so good.

Swordfish marinade was 3 citrus juices and zest, ginger, garlic, a little soy sauce, honey and olive oil.

The couscous was 1/2 red onion sauteed in olive oil with 1 tsp garam masala and 1 tsp curry, then add 2 cups total water+orange juice until it boils and add 1 cup ww couscous, 1/2 cup chopped dates and 1/2 cup toasted sliced almonds. Serve at room temp. You can add chick peas too.

I had leftover fresh pineapple so made a quick pineapple salsa with the leftover red onion, lime juice and cilantro.

I posted above but I have made Ina Garten's salmon nicoise salad for a dinner party, and it was a hit too. Especially when the tomatoes are at peak. The salmon and dressing are really fresh and delicious. https://www.foodnetwork.com/recipes/ina-garten/roasted-salmon-nicoise-platter-recipe-1908586
