Recommend a northern European city for a 6-day trip in July - 2 adults

Agree with Copenhagen, it’s a wonderful city and very easy to get around the country as well to explore a bit. 6 days is a good amount of time.
Amsterdam will be very crowded and can be hot, Edinburgh is wonderful but with the fringe it can be packed as well. Stockholm is also a lovely city and you could do a trip out to the summer islands easily.

Amsterdam
Stockholm
Copenhagen
Paris
Dublin

Less obvious:
Salzburg (long day trips to Vienna and Munich)
Garmisch-Parterkirchen (if want more outdoor activities)
Interlaken or other Swiss city if you like outdoors

We spent a week in Reykjavik and southern Iceland last summer and it was amazing. But you only need a day or so in Reykjavik, then you'll want to head off to see the countryside. One of the best vacations ever.

Vienna - Salzburg - Munich is a good route in the summer, with or without kids. Just rent a one-way car or take trains. So much to do and weather will be ideal.

Amsterdam you can also easily visit Den Haag and the beach.

Wherever you go OP, I'd also recommend going to the countryside and/or a second city.

Capital and first cities are much more likely to suffer from overtourism. Check out places like Delft, Bordeaux, Dorset etc. You'll benefit from lower hotel prices and easy parking as well - we paid less for the best room at a five star establishment in a small town in the UK than we would have paid for a tiny noisy box of a room in Paris or London.

Which small town in UK and which hotel?

To me, the answer is obviously Iceland. July is one of the most ideal times to go there, because it's generally cold.

I like Amsterdam for 6 days, and do day trip to Delft, or the Hague, visit the windmills.

I wouldn’t stay in Amsterdam for six full days. Add in a place like Bruges, Rotterdam, Delft.

It's still a city, but York has a lot of history and other attractions. Roughly 1/2 of London prices. You can also book a tour (small group or private) for the Yorkshire Dales (a la All Creatures Great and Small and quite beautiful).
