Rice pilaf with peas, carrots, baby corn, onions and spices + Mung and masoor lentil mixed Daal with spinach, garlic, ginger, tomato, green chillies and onions seasoning + Chicken, eggplant and pumpkin curry in onion, tomatoes, cilantro, ginger-garlic, spices, curry leaves, shredded coconut + cabbage, radish, cucumber salad with lemon juice. I can easily substitute fish or egg instead of the chicken in the curry.

Chicken in Panang curry with snow peas, carrots, shallots, baby corn, green peppers, thai eggplant,thai basil + jasmin rice + three mushroom salad (used like a side) with carrots, cucumber, green cilantro, green chilli, peanut sauce, lime.

Spinach-cheese ravioli with tomato basil sauce + sauteed veggie side with mushrooms, garlic, onions, olives, basil, zucchini, bell pepper, onions, tomato, pine nuts.

Friday and often one weekend day we get food out. The other we cook, sometimes something that takes longer like a tougher cut of meat in the instant pot plus veggies and carb.

It’s simple but healthy and replicable without thinking.

Weeknight favorites:
Pesto pasta, topped with crispy air fryer veggies
Tabouleh-falafel-hummus-halloumi plate (sometimes with lentil soup, sometimes with tomato-pomegranate salad)
Air-fryer shredded oyster mushroom tacos
Thai green curry

Weekend favorite: homemade bagels with homemade smoked labneh.

I would say our top 3 are
1) pork chops and rice. It’s an old family recipe— brown thick pork chops, and remove from pan. Sauté an onion for a bit, then add 1 cup of minute rice, 1 can of stewed tomatoes, 1 tsp mustard, 1 tsp sugar, and 1/2 tsp worchestershire sauce. Mix, plop the chops n top, a cover, and simmer for 50 minutes, then let it sit for 10 more.
2) homemade meatballs and sauce, served with crusty French bread.
3) either tacos or chili

1. Salmon cooked in foil in the oven, roasted green beans, rice

2. Black beans & rice, with onions & peppers, salsa, guac, cheese

3. Grilled marinated chicken breasts, steamed broccoli, roasted sweet potato wedges

4. Hard boiled eggs with pesto for dipping, cheese, crackers, olives, carrot sticks, sliced red peppers

If it’s not obvious, I’m Asian (Korean American) and we eat East Asian or SE Asian food 75% of the time.


Those are some of our family favorites, but I'm German born and raised.
