Well, breakfast is easy cause you can have eggs and cereal.

Lunch is easy cause she can have peanut butter and jelly sandwich sandwiches or grilled cheese sandwiches.

For dinner…

Rice bowl with roasted veggies (google tahini lemon dressing for drizzle)

Cheese fajitas… black beans, or vegetables

Trader Joe’s has a peanut sauce and I roast tofu and then I toss it with the peanut sauce and pan frying…. I eat that with pita bread.

I would do a toco night once a week that’s only four taco nights and each night I would do something different. There’s so many vegetarian taco options like… Red beans, tofu, avocado…. You can just google vegetarian tacos.

I do a loaded baked potato night you can compare that with a salad or soup.

I’d make plenty of soup and serve it with a baguette and brie.

And make a vegetarian sandwich like with sliced apples and arugula… but you can look up vegetarian sandwiches. I like to make one with a portobello sandwich and roasted red peppers..

I make something that’s like an açai bowl, but it’s really just bananas, ice, and blueberries for the base you can use vanilla protein powder if you have it. I would put it in a bowl and then I would slice strawberries and raspberries and almonds and granola on top and since you have a daughter, I might make it fun and put a drizzle of Nutella.

Well, I wasn’t looking for opinions on something that is a thing already. I’d be really interested as to why you think it’s a terrible idea? My kid is going to be living long after I’m around in a world that is damaged by large scale factory farming.

So please share - what’s terrible about reducing meat consumption? You clearly have an opinion you’re dying to share. Are you a beef lobby shill?

I'm not a vegetarian but my sister is so I know quite a few vegetarian meals. I don't generally go for imitation meat products but that's a personal choice.

First of all, don't overthink it. Mac and cheese with veggies, grilled cheese with soup, bean quesadillas. Good ol PB&J. Kids eat tons of these things without them being labeled as vegetarian foods, but they often are.

Chickpea curry is a fast and easy one.
Ratatouille with bread.
Tofu stir fry.
Don't forget good ol beans and rice, a staple diet across the world. Beans are basically the secret cheap super food.
Greek yogurt parfaits for breakfast
Eggs - great source of protein and iron. Frittatas and omelets are a good one.

Not PP, but do you know any other cultures other than white bread (bred) Americans. Yes, some (actually a huge number of people) completely avoid it.

I'm the poster that said I generally don't got for imitation meat products but I'll backtrack on that slightly, actually. Certain products work better in certain contexts than others. Meatless sausage, for instance, in a sauce? You aren't really going to taste much difference. So spaghetti and imitation meat balls works better than eating them on their own. As long as you have reasonable expectations they work fine.

Great idea OP! My kids love baked, breaded tofu (cut into cubes), various chickpea/lentil curries and stews, and it’s also super easy to shred tofu using a grater and fry it up in a pan with some flavorful sauces/spices.

Grilled cheese, cheese quesadillas, homemade mac and cheese, frittatas, etc.”

We do fake meat on occasion but try to limit it to a couple times a month.

Nobody is eating car fumes and cleaning chemicals Janice. Also why would you clean with chemicals? Or buy beef that’s not local and grass fed without any growth hormones and antibiotics? Maybe the problem here is you don’t know how to shop. Stop feeding your children garbage! Learn to clean too!
