Anybody else roasting a chicken today?

No, I'm a vegetarian and I volunteer at a bird rescue every weekend. I'm not going to be eating a carcass after working so hard to help save animals.

I did one last week. I save the tops of cut veggies, the outer layer of onions, bits of garlic, etc. (anything but brassicas) in the freezer in a "soup trash" silicone bag. When it gets full, I roast a chicken, then make stock with the carcass and the soup trash.

Smells fantastic!

Birds eat other birds. They don't care.

If you want to try something new next time, wrap the back of the chicken with bacon. Keeps it moist & adds flavour
