I use parchment paper a lot, but I also into sourdough baking and there are certain cases where it just doesn't work, so I have a trick or two to get things done without it

I have used cut up paper bags, the brown ones from the grocery store, before.
I've started making no knead bread with parchment paper and I didn't know that parchment paper has PFAS - I'll see if the brown paper from the paper bags works for no knead bread. |

| Read recently the suggestion to use butcher’s paper instead of parchment paper for the reason OP stated as a concern. Likely similar/ same as brown paper grocery bags another PP suggested. |
