Omg. I absolutely love parchment paper! I use it to line everything lol. I love that it's compostable.

I have no alternative suggestions, but I had no idea people hated it!

I use parchment paper a lot, but I also into sourdough baking and there are certain cases where it just doesn't work, so I have a trick or two to get things done without it

I have used cut up paper bags, the brown ones from the grocery store, before.

I've started making no knead bread with parchment paper and I didn't know that parchment paper has PFAS - I'll see if the brown paper from the paper bags works for no knead bread.

Read recently the suggestion to use butcher’s paper instead of parchment paper for the reason OP stated as a concern. Likely similar/ same as brown paper grocery bags another PP suggested.

You can't use grease with butter when you're baking at 500F, genius.

Never thought parchment paper had issues. Can you use something like cheese cloth for baking, to prevent sticking?
