Dinner ideas considering these variables?

If you just need one dinner, everything comes in a microwaveable cup these days- oatmeal, pancake mugs, Mac and cheese cups, cup of noodles.

If you need multiple meals ..we just did this.

We bought bread and peanut butte for sandwiches, and bananas that we sliced up inside them. You could mix it up with individual and different almond butter packets.

Grapes
Jerky
Chips

What time do you get there? Would it make sense just to stop and eat in / close to town? Or to buy takeaway and reheat in microwave? Is there a fridge in the cabin? How far is the drive from town? Can you get something hot (roasted chicken) or frozen and microwave it (frozen meals).

Some things you can get:
- noodles - the type that just add water;
- buy a roasted chicken and reheat or eat cold (but only if the drive is not too long from grocery store to cabin).
- buy deli meats / cheese / bread and make sandwiches
- buy pizza on your way to the cabin and eat cold pizza for dinner.
- buy chicken tenders and reheat in microwave.

Get a cheese and charcuterie tray (they don’t need refrigeration for a few hours, some fruit, and a screw top bottle of wine.

Add some good crackers or a mini baguette!

We will be in the desert with no way of keeping these items cold during our drive, as I said in the OP.


Can you stick an insulated lunch box, one of those soft ones that crushes up small, in your luggage, and then pick up some steam in bag frozen veggies to be an ice pack, and then to eat with your bagel and cream cheese or whatever?

Also, rent a car with airconditioning. Regardless of the food situation.

- Jarred pasta sauce and pasta (pesto or a meat sauce)
- baguette with olive oil
- charcuterie with dried fruit, nuts and meats (like a sausage that doesn't need to stay cold)

My favorite is kitchen & love meals. They even come with a spoon fork.
Another favorite - Loma Linda pouches of pad Thai, bolognese, and taco “meat” are truly a treat. I could eat the bolognese forever.
