Recs for international destination during Christmas to New Years week!?

We took our teens to Iceland for that week and it was fabulous. It was cold and dark but we saw lots of amazing things, including the northern lights. NYE in Reykjavik was so much fun!

Bringing back an older thread. Can you share any details regarding where you stayed, saw the northern lights? We are thinking about a last minute trip in January.
