| Honestly, OP, the easiest thing is to ask the vegetarian family themselves for quick ideas. Most vegetarians are used to supplying ideas like this, and can come up with things that everyone will like. |

Op here: thanks so much, I appreciate all the suggestions! I have five vegetarians in groups group so definitely want to do a fully vegetarian meal.
A wrinkle I left out of my post is that many of the guests are of Mexican heritage so I am a little hesitant to lean into enchiladas, tacos, etc. But maybe that is overthinking. Leaning toward falafel, pita, and salads. Going to practice grilling halloumi as another option. |
Op: they are like, we’re easy!!! And they are, TBH, but I have to prep in advance for my own sanity. We eat a lot of vegetarian meals ourselves but they are often stirfrys or pasta, things that require attention in the moment. |
Maybe you can get the falafel, etc., catered? That way you can just pick up. |
| Indian food is great for this - saag or butter paneer, aloo gobhi, raita, rice can all be prepped ahead. Store bought naan as well. You just need 10 mins to heat everything before serving. |

| I'd do crockpot pulled chicken with buns and pull out a bunch of cold sides: potato salad, couscous salad, fruit, slaw, caprese, deviled eggs, add a green salad for the ultra health conscious and chips for the kids. |

| Vegetarian chili. Stuffed mushrooms or peppers with polenta. Fancy mac and cheese variation. Hummus and cut up veggies. |

The yogurt has fat and protein. Would be great to have some chickpeas, nuts or lentils in the salad too. Very considerate of you. |
