Make-ahead vegetarian dinner party ideas?

Invited a family over for dinner and just learned they are vegetarian. Which is fine but my go-to dinner menu is typically something like grilled chicken, tomato and cucumber salad, couscous. Or salmon, etc.

The other thing is I want to prep it ahead, so no pasta.

I am having trouble thinking of ideas. It’s a mix of teen boys, health conscious women, and a couple kids.

Enchiladas (mushroom and pepper; southwestern with black beans and corn; spinach and cheese all options), served with rice, Mexican salad. Apps could be queso, guac. Tres leches for dessert.

Shakshuka + baked feta + pita + cucumber/tomato salad

You can grill halloumi and vegetables (eggplant, zucchini, asparagus, tomatoes, onions).

Falafel with Israeli Salad, Hummus, grilled Halloumi and pita

Paneer and Vegetable Skewers with rice, mango chutney and raita

Vegetarian Chili with corn bread and salad

Black bean and butternut squash enchiladas with chips, salsa and guacamole

Make what you posted but grill that person a portobello mushroom

Just order out? It will be fresher and you won't have to stress. This is why catering exsists!!

Hummus, pita, Greek salad with chickpeas added, canned dolmades. You could pick up prepared falafel or spanakopita as well.

Taco Bar. Just make sure to get vegetarian refried beans or make black beans.

I like the above idea of vegetarian chili and cornbread.

You can grill black bean burgers. As a vegetarian, please don't do just portobellos, we need protein. A portobello is so low calorie, even if you grill it with oil and balsamic.

So many things are easy and vegetarian - quiche or frittata, baked pastas, tacos/burritos/enchiladas, stir fry, curries.

Would rice/middle eastern yogurt/grilled vegetables/salad be okay? Not OP, asking for another occasion.

I was going to suggest enchiladas. Very easy to prep ahead.

You can prepare stuffed shells or manicotti ahead of time for pasta.
