lunch - veggie salad with diced hard boiled egg, almonds or pistacios, shaved parm cheese, diced avocado (the protein and fats help fill me) dinner ideas - chick pea curry roasted cubed tofu (I toss in bbq type spices like brown sugar, cumin, chili powder, paprika and a little cornstarch) with burrito bowl ingredients like rice, black beans, corn, avo, salsa, cheese - I often roasted chicken for rest of my family to accompany this black bean and roasted butternut squash tacos with pepitas sprinkled on top for extra protein snacks- apple plus cheese or peanut butter or handfuk of almonds protein bars hummus or feta dip and carrots |
Have you had roasted chick peas as a snack? Lots of recipes online for oven roasted or air fryer. |
Quinoa salads. Basically replace pasta or couscous in summer salad recipes with quinoa. You also can add in canned beans for extra protein. |
Egg whites. You can buy the pasteurized egg whites and use them in smoothies for extra protein. You can’t taste them. Or add to oatmeal while cooking for extra protein. Just temper them and incorporate slowly. Again, you cannot even tell |
I really like field roast sausage. It's expensive and you can make seitan yourself for less, but it's convenient. I like the chipotle one with sweet potatoes, black beans, salsa, and peppers and onions in a skillet, or the apple sage one with cabbage and potatoes. I also like the breakfast sausage...you could do it with Kodiak pancakes and some cottage cheese or Greek yogurt for a lot of protein. |
Look up "chickpea of the sea"...like tuna salad but with chickpeas. |

I buy a tub of plain hummus and dress it up myself. Lemon, red pepper flakes, whatever. I eat 1-2 tubs of hummus a week. Safeway O is my favorite. |

Are you near an HMart? Get their spiced tofu in the refrigerated case that has kimchi, seaweed salad, and pickled salmon. It is *so* good. I have tried to replicate it at home, but it's not as good and is time-consuming to make. Great with most types of salads. |
