Dinner for 16 Help?!!

I should add the vegetarian is Bangladeshi, so my very white, German/Polish self will not go near trying to cook Indian. I love the Mediterranean idea and enchiladas with some really good homemade guac.

I'd make Mexican.

A tray of bean and cheese enchiladas in red sauce and a tray of spinach, zucchini, corn, and pepper enchiladas in green sauce.

Serve with rice, a green salad (greens, radish, cucumber, pepper), pico de gallo, guacamole, sour cream, and various hot sauces or salsas such as traditional salsa, a fruit salsa, and a really hot one. Have lime wedges for squeezing and maybe jalapeño slices for garnish. Also serve with lots of chips. Maybe queso.

For dessert I'd have something with cinnamon and something with citrus.

Drinks: seltzer, white wine, sodas, lemonades, etc... Can make spritzers or drink something by itself (assuming many are not 21).

So many good ideas here. I like the Mediterranean and taco bar options plus a green salad because it seems like there's always someone you don't know about who is not eating gluten or dairy or something. Nice and customizable.

It's easy, affirdable, versatile/sonething for everyone, and can easily feed large groups....basically an answer to Op's question.

Lasagna can be done ahead, which is key for me. Big salad and bread and you are done. Buy some cookies for dessert or make this easy Bundt Chocolate Chocolate Cake from a mix. It’s very rich so slices a can be thin and can bake he night before.

OP wants to keep prices down. Once you add fish and not ground beef, it gets more pricey.

Yeah, it’ll definitely cost more but not seem like she got catering by a middle school cafeteria. Trade-offs.
