Taco or fajita bowls. Rice with whatever appropriate protein and veggies you have on hand — beef, chicken or shrimp plus peppers, onions, corn, beans, avocado. Ideally with cheese and salsa if you have them!

Salmon roasted in butter. Takes 10 minutes and is amazing.
