Is it very uniformed people getting the non-dairy, or is it a true niche of health compromised people buying enough that stores want to stock it? Or is it a lot of trendy people buying because they think it is healthier?
DCUM also skews very white. In addition to vegans, there are huge numbers of people— including children — who are lactose intolerant. It’s hardly a “niche” concern. And it’s also not “trendy”. “They think it’s healthier because for them it IS healthier.
I guess you never noticed that there are huge cultural traditions that are pretty much dairy free.
