Chipotle is mass produced frozen food that just needs to be reheated. Baja always required fresh food to be made daily. If they had pivoted food would have gone downhill but they probably would have persevered. |

What do you mean? This isn't true. You've seen the grill behind the counter, right? They're cooking raw meat. They make the rice and guacamole daily. Lettuce, peppers, onion, etc are chopped fresh every day. Peppers and onions are cooked on the grill from fresh. Chips are fried fresh. Red and green salsa, and beans come cooked in a bag. Tomatoes come diced in a bag along with corn and fresh aromatics are added (onions, jalapenos, cilantro, and lime juice) to make the pico and corn salsa. |

Because great food isn't made at microwave speed
I feel like they were huge 20 years ago and I miss them. I didn't even realize they were still around but now I am going to try and find one!! |
