I work in a bank and ethnicity info for loan applicants has to be provided to feds also. I can't speak for college admissions, but if the demographic information wasn't provided, banks literally had to guess. Not kidding.

Well, yes if a minority. The article says "On their applications, students were able to self-identify races and ethnicities. Although the University allows applicants to select multiple races and ethnicities, the U.S. Department of Education regulations mandate that each student be included in only one group. Application readers will not have access to the self-disclosed “checkbox” information.
