Tuna poke, gado gado and fresh spring rolls.

I have chicken curry leftover that I made last week. When it’s gone I’ll probably get takeout until it’s cool enough to cook again.

In the same vein, we'll be doing tomato sandwiches with the giant heirlooms I got at the farmers market on Sunday. Thick slices of fresh white bread (I'm stopping at the bakery on the way home), Dukes mayo, a little salt, and fat slices of tomato. I think I'll make lemonade to go with it.

No protein?

Gazpacho and BLT - we have a lot of tomatoes to use up!

DP. You’ll live if you don’t have protein with every single meal. Tomato sandwiches are delicious!

The heck is this about? It's like 100 degrees, we get this every summer and you live in a first world country.

This isn't Vietnam where you're eating all your meals outside or in a concrete room open to the elements. How much time are you actually spending outside? 10 minutes walking the dog? 2 minutes going from your air conditioned car to your air conditioned house?

Are you so frail that running your stove for 30 minutes and getting the temperature up to like 73 instead of 70 is too much for you?

Good lord, just cook your normal food.

Op here - great suggestions so far! I’m going with an earlier rec to make Turkey taco salads tonight with lots of veggies. And will probably make slow cooker pulled chicken tomorrow night. Not really seasonal but the pp mentioning pulled pork gave me a hankering for it.

I wish my kid and dh would eat BLTs and tomato sandwiches! They all have a weird texture thing with tomatoes (I know - what’s wrong with them??)

Op again. Just saw the pp right after I posted.

What a valuable addition to this harmless thread! You are a gift to us all!

Tacos. All stove top. That was last night. Tonight it's some nachos made with the left over taco meat for teen, and fish tacos (breaded fish filets cooked in air fryer for ten minutes) served with a quick veggie fry (sliced onion, green pepper and half a zucchini sauteed in pan with a bit of olive oil or marg for a few minutes) for the parents. Heat up refried beans in microwave, make fresh salad and boom, dinner. Ice cream with a cookie for dessert. Super easy.

Pesto and shrimp ver spaghetti. Some stove top heat, but nothing too bad. Will make some garlic bread in the toaster oven.
Had sloppy joes from the freezer last night. 5 minutes to warm up on the stove top. And picked up Popeyes fried chicken with homemade broccoli salad and corn on the cob for Labor Day.

Cheese and crackers, olives and stuffed grape leaves with a tomato/cucumber/onion salad.

+1. We're not in sub sahara Africa. I assume most people in the DMV have a/c. Just cook like a normal night. Now if you don't have a/c these ideas are actually ok.
