Mash about a third of the block with a can of salmon, a spoonful of mayo, and some chopped chives. Salt and pepper to taste. A few drops of liquid smoke seasoning if desired. Serve with crackers or celery sticks.

What are the good cans of crabmeat? My neighbor made a hot cream cheese crab dip that was delicious.

The stuff you get on ice in the fish department, not the shelf-stable stuff with the tuna. Lump is best, but in a hot dip nobody's going to care if you use Special or Claw.

In the “or something” (though I know this was a while ago and you’ll have long since used it up) category: Martha Stewart Everyday Food once had a sandwich that featured rye bread, salami, arugula and cream cheese. It’s been a favorite ever since. It may have also included tomatoes but I don’t like them.

My ILs have a family dip that is just cream cheese mixed with garlic salt. Add milk to thin. Serve with potato chips.

This is good. You can also mix the cream cheese with jarred tomato sauce for a pasta dish.

And I second the idea for pimento cheese dip.
