I like pinch of yum too. I make her baked chicken meatballs a lot z I also have a simple recipe for homemade chicken tenders that have breadcrumbs or cracker crumbs and Parmesan on the outside with a similar flavor profile. I try and have a fruit and a vegetable with dinner each night. I aim to eat a lot of those and less of whatever carb. My kids eat a ton of pasta; I have some that but aim for more produce to fill up with fewer calories. I looove soups but my kids won’t eat them. I still make them but have to have something else out too. Corn chowder, Italian wedding, butternut squash. Delicious and filling and you can make a ton. |

I’ve been on a diet and these are things I’ve made that work for me but my family enjoys. Last week I made:
Whole wheat spaghetti with ground Turkey and jarred sauce. I added shredded zucchini to the meat and it was a one pot dinner. Rice bowls with blacked talapia, black beans, and fresh mango salsa from the store. Topped with some mayo thing I made with leftover herbs and garlic. Greek salad (tomatoes, cukes, feta) and chicken shawarma, over oven fries with a Greek yogurt tzatziki. (I had chicken breast prepped and just cubed and warmed it up in some olive oil and shawarma spices. I also had pre-boiled potatoes I turned into oven fries) Veggie Soup (canned green beans, canned white beans, canned tomatoes, with mirepoix) and a package of tortellini thrown into it. Thx. I love doing dinners like that — plus it’s easy to practice portion control with the meat and starch, and load up on the salad, while my athlete kid loads up on the carbs. It’s kind of tough feeding a teenaged boy AND me at the same time but this formula is working right now. |

We have picky eaters, a 14 DS trying to gain weight, a vegetarian and my DH and I - trying not to gain weight. We do most of the below each week:
Chop veggies, boil eggs, make salad greens - easy daily salads for picky 16 DD Smoke a few proteins. This week was smoked Turkey. Sandwiches, on the salad, etc Roast sweet potatoes - vegetarian 13 DD - will eat anything that includes sweet in the name. Daily I cook at least two meals, lunch and dinner. Mostly I prep on Sundays. I do rely on rice or breads but make a protein and a salad every night. Maybe a salad bowl with whatever, or a rice bowl or a burrito bowl. We do meatless Mondays and at least one day of salmon and one other day of chicken. It’s not fancy for sure but we do try for variety weekly. |
I find "make your own" meals work well for this. For example, we did bowls the other night where I had the following options: rice, black beans, lettuce, pico, veggie grounds (we are vegetarians), shredded cheese, and sour cream. Everyone made something different and it was easy for me to have a salad that felt satisfying without also feeling like I was making a different meal for myself. Plus, my kids are all in for anything that lets them customize to their taste. |
Skinny taste recipes are great, but mostly I focus on not eating the carb portion of dinner or having very little of it. So last night was Turkey meatballs and vegetables and pasta and I skipped the pasta and had them over cauli rice. |

We do a Mexican night which is like homemade chipotle (but healthier since homemade) and a Schwarma bowl night which is kind of like homemade Cava. Everyone likes both and they can both be customized so someone can take more vegetables or more rice as they prefer. No one feels deprived because we serve the Mexican with tortilla chips and the Schwarma with rice and pita. But we also make cauliflower, Israeli salad etc. |
