Mackerel salad sandwiches made with tinned mackerel, kewpie mayo, capers, and some good crusty bread. Slices of fresh tomatoes and radishes on the side.

Made bread in the bread machine for BLTs (microwave the bacon so no heating the oven). And bagels with cream cheese. My DH is out of town, so I can really phone it in with dinner. The kids are plenty happy to eat pb&js or cereal. Everyone is enjoying fresh garden vegetables for snacks, berries and peaches from the farm, and lots of yogurt/smoothies. I figure they get all their protein and vitamins over the full course of the day and don’t stress dinners.
