It's too hot to cook or eat out. What are you having for dinner this week?

And I'm not even a vegetarian.

I don't mind cooking on the stovetop, especially if it's quick.

I've already had gazpacho and made an egg and potato salad with green beans earlier this week, am making eggplant parm tonight, black bean and veggie quesadillas tomorrow, and kale and white bean salad with rice on Sunday.

Salads. Kale chopped salad and falafel tonight. Salad is kale, cucumber, red bell pepper, green onion, fennel, Serrano chili, chickpeas. Dressing is tahini, lemon juice, olive oil, garlic, some Aleppo pepper. I LOVE this salad.

I don't cook anymore but my man wife made lunches and dinners for the week. He smoked all kinds of things Monday including vegetables. I love him doing this. All night in the smoker, watches the temp on his phone. The smell alone is incredible.
I made a carrot cake and peanut butter chocolate chip cookies. I freeze half of those for a later date. I wish it would cool off some. I really want to make bourbon bread pudding and a peach cobbler.

The kids are making spicy hot lamen, and we'll continue watching Avatar, The Last Airbender on Netflix.

This is our summer. Distinctly un-intellectual and junk-foody!

Big salads every night. Watermelon, dessert is peaches and whipped cream. Hummus + cucumbers for snacks.

Even with air conditioning, it’s unpleasant to babysit hot pans on the stovetop and the oven heats the kitchen.

I made roasted eggplant, tomato, and smoked mozzarella stacks yesterday. Used the toaster oven for roasting. One of my favorite summer meals.

Otherwise it’s salads and more salads here
