The above recipe is so good! I add in a bell pepper and an onion (both thinly sliced) plus an extra egg.


My kids also love this (even though they’d say they do not like cabbage).

Lettuce wrap night

Any combo of
Ground beef, turkey, pork, tofu, any type of firm fish, marinate with sauce of your choice. We usually do a Korean bulgogi sauce
Quick pickled red onion, carrots, cucumber, shallots, etc
Brown rice optional
Spinach
Green onion
Radish
Bean sprouts
Mint/cilantro/Thai basil etc
Romaine, little gem, butter lettuce cup

Forgot to add - leftovers go into fried rice the next day. If you want fewer carbs, substitute cabbage, cauliflower rice, or firm tofu. Quinoa, couscous, wild rice, barley, buckwheat noodles are all better than white rice for pre diabetics

OP, I do a lot of these with carbier adds for the kids, roasted small potatoes, chunks of sweet potato, etc on the pan or something like rice for them cauli rice for adults with sheet pan meal on top. I love the convenience and easy clean up.

Check out the Glucose Goddess IG for ideas re: blood sugar, a 20 min walk after meals can be really helpful too. Great for DH and everyone else too.

I also get good recipe ideas from Ted Naiman's twitter, here is one easy meatloaf, I serve with green beans and salad for the adults, add in small baked potatoes for the kids baked while meatloaf bakes.

I will often make a double batch and bake one as a loaf and the other in a muffin pan, great for the freezer, portion controlled and my kids love the minis.

Any of the sheet pan leftovers are great over a salad for lunch or in a low carb wrap with some olives or feta, sometimes I will double the recipes to make bases for lunch. So easy and quick.

Great idea about double batch and freezing the second as minis. A whole loaf always takes forever from freezer to done.

— Asian turkey meatballs — add chopped green onion, cilantro, ginger, an egg, minced garlic, I T soy sauce to ground turkey. Bake them. Tastes very similar to dumpling filling. Serve with rice and I like to do julliened carrots sautéed in garlic and sesame oil but you can do any vegetable.

— once upon a chef recipe for Peruvian chicken. We make those Brazilian cheer bread puffs as a side plus a salad or something.

— do you so eggs? A crust less quiche or a fritata with a side salad. I usually make a spinach smoothie as an option for my non salad eaters.

— apps night. Deviled eggs, mozarella sticks or Brazilian cheese puffs, home made kale chips, carrots with dip.

Well, we are Indian so we eat Indian food. Mostly vegetarian, and brown rice or wheat roti to cut down on carbs.

We have been doing a lot of spaghetti squash bowls, recently. We did a chestnut/mushroom/leek shawarma bowl last night. We do a “pizza” beans, Caribbean (black beans, callaloo, jerk veggies), whatever.

No offense but does anyone read ingredients lists of some of these things? Not so ‘natural’ unfortunately although I understand the need to eat low carb etc.

We make lots of sheet pans meals. Usually they include a carb but DH and I skip it or eat a small amount of it. My kids’ favorites are:

sheet pan chicken, pepper and onion fajitas

sheet pan chicken sausage, peppers, inions and baby potatoes

sheet pan shrimp with broccoli tossed in pesto (could sub chicken for shrimp of your kids won’t eat that)

We also love bowls as a PP said - often the options include leftover chicken or ground beef, black beans, rice, avocado, corn, tomatoes, shredded lettuce, crushed tortilla chips. I’ll often make mine as a salad.

Speaking of salads, my kids like salads when lettuce is not the base and they choose what goes in theirs. Like the bowl idea. I often include cut up fruits, cubed cheeses and hard bouled eggs as salad options.

Last, my kids are more willing to eat vegetables in soup form. We make a lot of soups. Favorites are chicken tortilla soup, and lemon chicken orzo (I keep the orzo in a separate bowl and add to the kids’ soup, not mine.) They love bread and crackers (or grilled cheese squares) with their soup, DH and I will have salad with ours.

Taco Tuesday for us always include a bowl option. We all end up with taco salads, all of us topping our salads with crushed Doritos (add as little or as many as you like).

Also DD started loving fish once we coated it with crushed pretzels and offered a honey mustard sauce to dip. Now she requests Salmon from restaurants. You just need to start somewhere.

I'll also roast a bunch of veggies on Sunday and add to salads, curry's, etc during the week. A mild curry may work for you? You can go heavier on the veggies for your DH, and the kids can get more potatoes.

Agree with lettuce cups with either teriyaki tofu or teriyaki ground turkey. I use this recipe and serve in lettuce cups or as rice bowl.

Beef: all of these can be eaten without carbs for adults with a side of veggies or over a salad/lettuce instead of a bun. Though it does make life more sad.
Mississippi roast
Beef kabobs (that soyaki from TJs is an easy way to accomplish but DIY marinade isn’t that hard)
Burgers
There are ground beef “gyro” recipes — basically salt pepper oregano — tastes decent over a salad with tzatziki (but better in a pita LOL)!
